Edamame are a type of soya bean very popular in Asian cuisine. They are high in protein and are grown much like a dwarf French bean. The pods are often picked whole when young, cooked, and served with salt.

Hokkai Green is a compact, stable variety with dark-green pods and large beans. Each pod contains about 3 tasty beans.

How to grow:
Sow the seed directly into growing site in May. Sow 2 seeds, 5cm deep and 5cm apart. Thin out leaving the strongest seedling every 15cm or so.
White flowers are followed by short pods, allow to grow until the pods are about 6-8cm and harvest July onwards. The plants get to a height of between 60-75 cm.
Keep picking as the pods fill with beans, usually only about 3 per pod. Succession planting will give you a continual supply all Summer long.

How to cook:
Griddle the whole pods on a hot plate or steam until tender. Serve covered in course sea salt. Shell and eat the beans at the table (you don’t eat the pods).
Discarded pods can be composted.
